Sticky & gooey toffee apple & ginger cake covered with butterscotch sauce

This is where the idea for my little cakes started, inspired by my caramelized upside-down cake, just slightly warmed, it is like heaven… with vanilla ice cream it’s even more divine!

This Toffee Apple and Ginger cake is best eaten warm when the toffee sauce is soaking into the apple sponge. All the same, when it’s cooled, it doesn't stop me polishing off any that is left.
