This smoked mackerel pate is one of my go-to recipes. Incredibly quick to make, it's just delicious and absolutely full of flavour. Sometimes when feeding my family or friends I place a bowl or jar of this pate in the centre of the table for people to dip crusty bread or toast into.
 
Baba ganoush is a classic Middle Eastern dish, with the smoky, smooth and creamy flesh of grilled aubergines mixed with tahini, garlic and lemon juice. Pomegranate seeds make a colourful and sweet addition, but you can certainly serve the baba without them. These mini frittatas have a divine array of different flavours from the chorizo, herbs, tomatoes and cheese. They can be served hot or cold.
